Grilled Corn, Scallions, and Bacon


In the summertime, I love love love corn! Some people crave icecream when its hot out, I crave hot grilled corn (and icecream too, when we are NOT eating healthy!). I like to do different spin on corn all the time since this is a summertime staple in our house. I found this recipe on Martha Stewart.com and thought it looked pretty tasty and boy it was! We had friends over for dinner last week and they loved this corn! I changed it up a bit which I think it turned out better than the original recipe.

Alterations:
Corn: I grilled 6 corn on the cobs instead sauteeing frozen corn
Bacon: I only used 2 slices so it didn't turn out greesy
Red Pepper Flakes: It calls for a pinch but I used about 2 tablespoons because we LOVE spicy!
Lemon Pepper: It doesn't call for this but it definitely added great flavor. I used about 1-2 tablespoons.
Scallions: I only used one bunch of green onions which was more than enough!


Grilled Corn, Scallions, and Bacon

2 slices bacon, cut small into small pieces
6 ears of corn
2 tablespoons of red-pepper flakes
1 bunch of scallions, sliced
Lemon pepper to taste

Directions
Grill corn turning frequently until done. After corn is cooled, cut corn from the cob into a bowl.

Cook bacon in a large skillet over medium-high heat, turning occasionally, until browned, 4 to 6 minutes.

Add corn kernels; season with lemon pepper, and crushed red pepper. Cook, stirring often, until corn is tender, 5 to 8 minutes. Stir in scallions. Serve immediately.
