Grilled Vegetable Baguette Sandwich


I haven’t been cooking anything worth blogging about lately because I have been getting home late and things have been pretty hectic. Also with the hot weather and day light lasting past 9 pm, I like to take full advantage of being outside as much as I can! So yesterday all day at work I was thinking, what should I make for dinner. I really didn't feel like cooking inside for a long time and so I was trying to think about what I had in the fridge. All I could remember is that I have a ton of vegetables that I picked up from a farm down the street a few days ago. So I decided to invent a grilled veggie sandwich. I am sure I didn't invent these sandwiches but I like to think I did. So yes, last night we dined on these veggies placed in a whole wheat french baguette. This was definitely a yummy keeper and took no time at all to make!




Grilled Vegetable Baguette Sandwich

1 large whole wheat baugette, cut into 3rds
1 zuchini cut, lengthwise about 1/4 inch slices
1 red bell peper, cut lengthwise about 1/2 inch slices
1/4 red onion, cut into 1/2 slices
1 portabella mushroom cap, cut into 1/2 inch slices
2 tbsp olive oil
2 tsp garlic powder
1 tsp of powder red pepper
Salt to taste
2-3 balls of buffalo mozzarella cheese, sliced


After all vegetables are cut, toss with olive oil, garlic powder, salt and red pepper. Grill on high heat for about 15 minutes, stirring once or twice.

Place baguette on grill to toast for about 5 minutes. Turn over and place cheese sandwich to melt for 2 minutes. Onces cheese is melted take baguette off the grill and top with vegetables.
